In this video, Erik Paulson discusses having a set of "go to" moves, bread and butter moves that you master. Do you guys agree? Or should you be not a master of a few moves, but better across th board?

I think the simpler the move, the better, and I think you should have around 3 per position at the least.

CACC Wrestling bread & butter holds are: - DWLs - Toe Holds - Neck Cranks Any grappler who want be called catch wrestler should master those moves before others!

If you broke it down by position, here's what I'd recommend as a foundation:
Inside open guard (Saturday Night Ride) - Stopper Toe Hold Inside Half-Guard (Top Leg Scissors) - DWL with Carney Stretch, Head Wrap neck crank / reverse arm triangle. Cross Body Side Control - DWL, Keylock, Half Nelson flat crank, Half Nelson chin hook Knee Mount (Belly) - low Armpit ride with face push, low armpit ride with arm bar. Lateral Press (North-South) - TWL with sitout, Reverse Guillotine (Monson Choke) Head & Arm (Scarfhold, Kesagatame) - Pillow V-Arm Lock, straight arm lock, head & arm choke (arm triangle variation) Top Saddle (Mount) - Spread Eagle, Fist Choke, Lemon Crusher, V-Arm Lock (TWL). Referee's Position (traditional back control) - Burns Hammerlock, Half Nelson turnover to Flat Crank + Chin Hook Rear Stretcher (back mount with hooks) - Sleeper, Reverse Lever, Crossface Chickenwing
And I'd recommend working on sweeps and standups more from Bottom Body Scissors and Single Leg Scissors (Guard and Half Guard)

There seem to be some bias against Top wrist lock, it's one I'd certainly consider 'bread and butter' ;-)

Yes it can be, perhaps better setup when you have their near arm trapped, either scissored with your legs, or underneath them from a hammerlock.
