Ive never tried to step over/across someones guard like he shows in that first video. Anyone got any input on how well that part actually works in live rolling. seems like the guy on the bottom would catch your leg pretty easily.

I'd want to control his opposite arm and bring it across his body and 'sheath' it. That way he has nothing to post on that side when I turn him over. Even if he grabs me with his other arm trying a sweep, there's nothing stopping me turning him over now I've 'sheathed' his other arm.
Also it wouldn't surprise me if it's more effective to step over at an angle, like over his opposite shoulder, then trying a lateral turn. But I've not tried that.
