Off of what? That's really vague what you are saying. the guy grabs a front head lock/guilotine usually when I shoot. Sometimes from standing. So I need a defense from Standing from shooting posistion (on knees) in guard

If shooting straight in - Aim your face for their belly and only turn your head on impact. Keep back straight and head up.
Also consider stepping out and shooting in at an angle.

Lets say you shoot on his lead leg say his left leg. He sinks in a guilotine. Ok if he is standing try this.
Take your left hand grab his right shoulder. Now with your right hand grab under his left knee the knee you shot in on. Try lift and twist and slam. End in side control.
If you do it fast and hard enough you might hit the arm triangle or work the wrist locks or whatever.
